Rustic Avocado Salad

To be or not to be – a vegetarian?! I gave up eating meat for Lent this year and it wasn’t all that bad (except for the insane steak cravings). My stomach felt great and everything I ate was so healthy and fresh. Now, that I have been carnivorous since Easter, I sometimes look at meat with disgust and wonder why I am eating something with such a boring and unappetizing color? I am back to contemplating – Vegetarian or carnivore? *hmmmmm?* So for now, I have decided to participate in No Meat Mondays and eat a max of only one serving of meat a day. During these efforts, I came up with this bad boy – Rustic Avocado Salad! I warmed up a tortilla with cheese and put some of this delectable dish right on top! NOM NOM NOM!

Summer Checklist : Day 23

Today, I blog from my cozy bed! The windows are open and I must say, it is a bit chilly! I cannot believe how fast these last days of summer are going!

ITEM 9 : Quench your thirst with refreshing sun tea!

All you need is a pitcher, water, about 7 tea bags, and a warm, sunny day!

I like to use about 7 tea bags – sometimes green tea with one regular/black tea bag or I make all 7 be the regular tea. I add water and sit it outside for a few hours, or until it reaches a desirable strength. I do not like a lot of lemon in my tea, so I sliced half of the lemon that I juiced while making my Rustic Avocado Salad (see next post for recipe). If you grow mint in your yard, add a few leaves to your tea for a refreshing twist! After it is brewed, pour into a glass with a lot of ice or place in the fridge until it gets nice and cold!

ITEM 8 : Get the beach body you’ve always dreamed of!

Okay, I get it, I probably should have posted this a while ago. Now, Now, don’t get your bikini bottoms in a bunch! It is never too late to start working out and aiming for your goals! If you stick to eating healthy foods and working out daily, you WILL see results! No more McDoubles AND enough with the late night snacking! You are in charge of your own body and its outcome. Let’s get in shape together by doing this Dawn & Dusk Workout. It will get your blood pumping in the morning and I know it will put a smile on your face as you start your day! Even if I hit the gym or go for a run, I still like to finish up with these moves before bed. Lying in bed counting sheep while your muscles burn = A Good Feeling (as Flo Rida would put it). Track your progress in a journal or a fitness calendar! In just 4 weeks, you are certain to see results!

Summer Checklist : Day 25

Only 25 days of Summer left and can you believe the sun set at 7:41 EST! Can you believe it? This means we are having less and less daylight to enjoy our summertime activities! Make sure you get outdoors and soak in that vitamin D!

ITEM : 7 Take your dog on a nature walk

Nigel, AKA Nigey, my Miniature Schnauzer has become blind this Summer. It has definitely upset everyone in our family, but let me tell you what – he can still put a smile on my face by just being his goofy self! One thing that he absolutely loves is going on adventures in the yard with me. I let him lead the way throughout the yard – he uses his sniffer and I use my peepers for backup. It is a great bond that we share 🙂 You both will get in some exercise and stay healthy by taking walks, and your pup will love you for it (most likely by giving you tons of slobbery kisses).

ITEM 6 : Enjoy some in season fruits and veggies!

This item on your checklist might seem like a no brainer, but now is your chance to find new ways to enjoy your favorite summertime fruits and vegetables. Try a peach cobbler, fresh avocado guacamole, mixed green salad with berries and cheese, or stuffed peppers. Whether you grew your own garden (green thumbs up!) or you take a ride down to your local Farmers’ Market, enjoy the best and freshest foods of the season! Fresh fruits & vegetables are filled with vital antioxidants and vitamins. You might have even noticed your overheated body craving a juicy peach or watermelon more than usual this season. That’s actually because it has the ability to hydrate you while providing your body with healthy nutrients – great for your skin, your mind, and your body!

ITEM 5 : Try a new type of cuisine!

One that knows me might very well say that they are shocked to find that I have not scored the lead role in an episode of my 600 Pound Life! For those of you who do not know me, I am a rather petite, lil’ lady who has a knack for putting food away like no other! Enjoying unique restaurants and fine, fresh food is something everyone should do this Summer! My favorite find has been Kanella – Greek Cypriot Kitchen in the City of Brotherly Love, Philadelphia, Pa. It has been voted to have the one of the top ten best breakfasts in America! If you have not had Greek food, I strongly recommend it. This year, I have also tried a new Thai place and had a fish that’s origins are prehistoric! You have 27 days left to satisfy your taste buds at a new joint with friends and family!

Still enjoying that Summer heat? There’s only 28 days left!!

ITEM 4 : Take me out to the ball game!

Have you gone to a baseball game yet this year? If not, there is still time left in this season. You can tailgate with friends, enjoy some great food (cheese steaks if you are a Phillies Phan), or go on a giveaway night! I got a bobble head and the Phanatic threw free hot dogs into the crowd! What sounds better than catching a flying weenie?

ITEM 3 : Relax with a Cold Drink in Your Hand

Summer Checklist : Day 30

Time is ticking down on this beautiful Thursday! We only have 30 days left of Summer! Can we make the best of it’s warmth before the Autumnal Equinox?!

ITEM 2 : Get to the shore folks!

Shh! Don’t tell my bed, but the beach is probably the most relaxing place on earth! Picture this – the sand between your toes, the heat beating down on your skin (which in my case, desperately needs some color!), and the sound of the waves crashing on to the shore! Do you wish you were there yet?! Whether you are the lone traveler, or like to make an event out the trip with friends and family, the beach is the perfect Summer getaway! Plus, who doesn’t enjoy a little time chasing the seagulls away while eating some boardwalk food? 🙂

Summer Checklist : DAY 31

ALERT! ALERT! There is only 1 month of Summer left!! Have you done everything you wanted to? I don’t know about you, but mine flew by and there is still so much sun left to soak up! So here is a checklist of things I need to complete before I trade in the bikinis and flops for sweaters and ankle boots!

ITEM 1: Dive into a great book!

I like to read about 3 books at once so this has gone by pretty quickly for me! I will finish the last book of the Hunger Games series tonight (if you have not read them yet, please do – they are to die for). I am also on the last Fifty Shades book and in the middle of White Girl Problems. I have finished The Lucky One and will soon start Something Borrowed. So much reading and only 31 days till Fall!

Pull up a beach chair, slather on that SPF 30 (or 50 if you experience White Girl Problems), and Dive in! ❤
