To be or not to be – a vegetarian?! I gave up eating meat for Lent this year and it wasn’t all that bad (except for the insane steak cravings). My stomach felt great and everything I ate was so healthy and fresh. Now, that I have been carnivorous since Easter, I sometimes look at meat with disgust and wonder why I am eating something with such a boring and unappetizing color? I am back to contemplating – Vegetarian or carnivore? *hmmmmm?* So for now, I have decided to participate in No Meat Mondays and eat a max of only one serving of meat a day. During these efforts, I came up with this bad boy – Rustic Avocado Salad! I warmed up a tortilla with cheese and put some of this delectable dish right on top! NOM NOM NOM!

Today, I blog from my cozy bed! The windows are open and I must say, it is a bit chilly! I cannot believe how fast these last days of summer are going!
ITEM 9 : Quench your thirst with refreshing sun tea!
All you need is a pitcher, water, about 7 tea bags, and a warm, sunny day!
I like to use about 7 tea bags – sometimes green tea with one regular/black tea bag or I make all 7 be the regular tea. I add water and sit it outside for a few hours, or until it reaches a desirable strength. I do not like a lot of lemon in my tea, so I sliced half of the lemon that I juiced while making my Rustic Avocado Salad (see next post for recipe). If you grow mint in your yard, add a few leaves to your tea for a refreshing twist! After it is brewed, pour into a glass with a lot of ice or place in the fridge until it gets nice and cold!

I decided it is time to start my Triathlon training. Apparently to swim just one mile, I have to go around my pool about 94 times! -I did 32! This was better than expected, but clearly not too great! I ran for an hour and hiked in the woods. To my surprise and delight, I came across this creek which leads to Anteitam Lake! It was the perfect find and it kept a smile on my face even once the rain chased me (maybe I chased it!) back home! Tomorrow, I will start the day with yoga and a bike ride. If the weather holds out, another swim and run are in order! I will keep you updated! If anyone has tips – please let me know 🙂
