Summer Bucket List 7/30: Try a Veggie Burger

Hi Friends!

When you think of Summer bucket lists, you probably think of grilling or having a picnic. When you think of grilling and picnics, you probably think of hotdogs and hamburgers. Now, I used to hate hotdogs; I had this whole problem with food that jiggled but I have since seen the light and now am a fan of the grilled weenie. However, burgers… burgers are a different story. I have a severe aversion to them. It was this whole beefy, juicy slider fiasco of 2007 that I would rather not relive – not just for my own benefit, but for yours too!

SUMMER BUCKET LIST 7/30: TRY A VEGGIE BURGER

2013 veggie burgerIn an effort to bring different versions of burgers back into my life, I decided to make my own veggie burger. I found a recipe on my “PopSugar” App which called for a mixture of quinoa, chickpeas, barley, sweet potato, and peppers, among other seasonings. I didn’t have barley, but I did have brown rice. I also didn’t have red peppers, but I did have red pepper flakes! I baked them instead of frying them in a pan and I must say they turned out great! I lightly pickled some cucumbers and used fat free sour cream on the side! It was a great dinner and I am ready to eat it again tonight…make that right now!!

Summer Checklist : Day 10

ITEM 22 : Grill a Pizza!

I have always wanted to do this!!! Plus, grilling is the best way to cook in the summer! I played the grill master role this time and, let me tell you, I rocked it! Cooking with fire and great views – yeah, I’ll take you up on that offer! I am also known for my carmelized onions, I think I just have the magic touch, but sugar is key! I always cook without really measuring, but I tried to relate the ingrediants to normal methods of culinary measurements when I made the recipe. Check it out! You can always use your favorite toppings. But the fresh veggies, in my opinion, make this sweet and summery!

Rustic Avocado Salad

To be or not to be – a vegetarian?! I gave up eating meat for Lent this year and it wasn’t all that bad (except for the insane steak cravings). My stomach felt great and everything I ate was so healthy and fresh. Now, that I have been carnivorous since Easter, I sometimes look at meat with disgust and wonder why I am eating something with such a boring and unappetizing color? I am back to contemplating – Vegetarian or carnivore? *hmmmmm?* So for now, I have decided to participate in No Meat Mondays and eat a max of only one serving of meat a day. During these efforts, I came up with this bad boy – Rustic Avocado Salad! I warmed up a tortilla with cheese and put some of this delectable dish right on top! NOM NOM NOM!
